It’s delicious warmed in a bowl with a little maple syrup or honey and cinnamon. Leave about 1/2-inch of flesh around the edges and bottom of squash. Again, using an ice cream scoop makes this step easy. (see full recipe below)Īfter roasting and the squash has cooled, you want to remove some of the flesh to make room for the Southwest filling.
